Happy Pancake Day!
Today I want to tell you all about the *perfect* recipe for superlight, superyummy pancakes. I make pancakes for breakfast almost every Saturday: it’s the best way to kick start the weekend!
So here’s my recipe for butterfree (and dairyfree too if you choose soya/almond/coconut milk and yogurt) pancakes. Look at these beauties 😀
Ingredients (for 6 pancakes)
100 gr. flour 00 (selfrising or add half tsp of poweder yeast)
1/2 tsp soda bicarbonate
1 pinch of salt
20 gr. sugar
6 tbsp white yogurt (you can choose it fat free, dairy free… just as you like)
Sift the flour with soda bicarbonate and salt. Add the sugar and mix. In another bowl, beat the egg until fluffy then add the milk, the yogurt and the vanilla essence. Mix the ingredients of the two bowls until you get a smooth cream. Heath a pan on the cooker and quickly grease it with a bit of butter or oil right before cooking each pancake. Cook one side for a few minutes then turn it around when you start seing some air bubbles on the surface or when golden.
Enjoy the pancake hot, topped with maple syrup, sugar, chocolate, honey or even Nutella. Add fresh fruit like blueberries, bananas or strawberries.
